Sheet pan recipes are one of my favorite things to make on a weeknight.

They are easy to throw together and pop in the oven and turn out delicious.

Not to mention the fact that you can even meal prep these if you want. Just chop up everything, throw it in a ziploc bag, and freeze it until you are ready to pull it out to thaw one morning and cook that night.

This keilbasa and vegetables sheet pan dinner doesn’t take too long to make. The most prep I did was snapping the ends off the green beans.

This particular kielbasa sheet pan recipe has become a favorite in our home.

The great thing with this sheet pan recipe is it can be personalized for your taste.

This ingredients here call for a pound of carrots because we have carrot lovers in our house. But if you want more kielbasa and less carrots add a second kielbasa and cut the carrots down to 8oz.

Kielbasa and Vegetables Sheet Pan Ingredients and Supplies

  • 12 oz Fresh Green Beans, snapped and washed
  • 2 Bell Peppers (Red or Orange)
  • 12 oz Polish Sausage/Kielbasa
  • 1 pound Baby Carrots
  • 2 Tbsp Olive Oil divided into 1 Tbsp each
  • Oregano
  • Salt
  • Pepper
  • Large sheet pan
  • Parchment Paper

Directions

1.) Preheat oven to 400°F.

2.) Put carrots in a bowl with 1 Tbsp. Olive Oil, add salt, pepper, and 1 tsp oregano. Toss in the bowl until evenly covered with oil and spices.

3.) Cover sheet pan with parchment paper.

4.) Add carrots to the sheet pan first and bake @ 400°F for 25 minutes. The carrots take longer to cook so these have to be put in the oven first.

5.) While the carrots are cooking cut bell peppers into long slices.

6.) Cut up Kielbasa.

7.) In a second bowl add in cut bell peppers and snapped green beans. Add 1 Tbsp. Olive Oil, salt, pepper, and 1 tsp oregano. Toss in the bowl until evenly covered with oil and spices.

9.) Sprinkle more oregano (to taste) on the cut kielbasa, and add more to the vegetables if desired.

10.) Place sheet pan back in the oven and cook for another 20 minutes.

11.) Once done let it rest and cool for about 5 to 10 minutes, serve, and enjoy.
